Trending Now: Pink Lettuce! This Photo-friendly​ Veggie is All The Rage (Just in Time for Spring!)

Sure, it could make for quite a cute scarf, shoe color or a fresh lip color for Spring. But in your salad? A pink chicory called Radicchio del Veneto has become all the rage. Instagram feeds and popular restaurants are incorporating the luscious leaves in bright shades of pink into their most delicious recipes.


Primarily grown in the Veneto region in Italy, it can be also found California, Pennsylvania and other areas of the U.S.,

According to Eater, the vegetable develops its pink hue by being “forced,” which means it’s grown for a certain time, harvested, then replanted and grown in the dark so sunlight doesn’t reach its stem.

Where can you find it? Whole Foods, both Eataly locations, and various wholesale produce suppliers like Baldor. It is sometimes available at New York farmers markets, but at least one usual purveyor, Campo Rosso Farms, wasn’t able to grow any this season due to the cold winter. Whole Foods reps say they should have it in stock throughout the rest of winter and spring.
